Hello! Did you have a good weekend? I did all the things from the to-do list I mentioned in my last post except the pantry organization. I just wasn’t feeling it, so I skipped project pantry.
In other news, I am happy, things are looking much better now, just in case you wanted to know how I am doing
Yesterday the husband and I decided to have a date night at home . I decided to go with a Mexican theme and since it was intended to be a relaxed evening (read-we are lazy bums), the meal was enjoyed in front of the television on the center table…how romantic right!?
The star of our dinner was this virgin margarita, inspired by the daily juice ! I don’t drink so I had to come up with something that was fun but did not involve alcohol. The contents included,
But before blending, there was a lot of labor involved, I had to actually husk the coconut. It looked like a daunting task but wasn’t that difficult actually, my santoku knife definitely came in handy!
The husband enjoyed tacos while I enjoyed the contents below on a bed of greens.
For our mexican feast, the husband enjoyed a build your own taco and I enjoyed a salad bowl. The contents guacamole, pico de gallo, black beans and cumin-cilantro (brown) rice!
The guacamole was made from the guacamole dip creation sent to me by Foodbuzz and Tostitos as a part of the Foodbuzz tastemaker program. The guacamole definitely tasted a lot more restaurant like and it was so easy to make it.

Haven’t talked about goals for a long time, but for the month of May I am going to be disciplined and do the following.
I want to go to bed on time and wake up on time. I really love the feeling of waking up in a relaxed way, enjoying breakfast, soaking in mother nature in the morning and getting ready for work at ease. My life on the contrary is hurried, hurried, hurried not fun. So I am going to do my best to wake up at 6am everyday.
Write a blog post everyday! This is something I have picked up from Gretchen Rubin at The Happiness Project . She says, do something, anything for a month and it becomes ingrained in you as a habit. That was my plan for my resolutions this year to begin with. I’ll make my posts short, structured and write daily.
Apr 30: Treadmill run @5.5 mph, distance covered-1.5 miles run.
May 1: Outside run, distance covered-1.75 miles.
