Dark Chocolate Peanut Butter and Banana Ezekiel English Muffin

What a way to start the day. I was feeling a little low this morning, I am sure I am just a little run down by all my worrying and hopefully did not pick up Zoe's cold. Ms. Zoe is home again today, but she did break her fever in the middle of the night and is acting like her old self again. I am trying to be a good mother and keep her home the requisite 24 hours after a fever breaks rule. I am just glad that she is happy again and feeling better.

So I needed a little pick me up this morning and decided to have a decandent breakfast, Dark Chocolate Peanut Butter and Banana Ezekiel English Muffin. Wow! This was a real treat and did make me feel better along with a good cup of coffee and I was back to my old self.

Dark Chocolate Peanut Butter and Banana Ezekiel English Muffin

1 Food for Life 7-Sprouted Grain Ezekiel English Muffin
1 tablespoon Peanut Butter & Co. Dark Chocolate Dreams Peanut Butter
1 small banana, sliced
1 tsp Cacao Nibs

Toast english muffin, spread with dark chocolate peanut buttter, top with sliced banana and sprinkle some cacao nibs. Enjoy!

The cacao nibs was a nice addition, added a little crunch as well as bite to the overall deliciousness. Excellent.

I taught Baby Boot Camp, ran on treadmill, did Ab Ripper series, cleaned up and then made lunch. I love food, I really do and this lunch is another example of simple fresh ingredients that are nutritious and delicious.

Spinach, Roasted Tomato and Sharp Cheddar Egg White Omelette

1 tablespoon diced onions
1 cup spinach
1/2 cup roasted tomatoes
1 oz. Cabot 50% reduced fat Sharp Cheddar Cheese
1/3 cup of Liquid Egg Whites
1 tablespoon Koki's Green Garlic Salsa

Spray omelette pan with cooking spray and put over medium heat. Add onions and let them sweat for 2-4 minutes, add spinach and cook for another minute or until just wilted. Remove from heat and add egg whites, top with spinach mixture, tomatoes and cheese. Cook for another 1-2 minutes or until cheese is melted and eggs are cooked through. Remove from heat and top with fresh salsa. Enjoy!

I am off to get ready to teach Kids In Motion this afternoon. I hope we get some kids to turn out. We shall see. I am hoping to be able to promote the class a bit more once I get the kids' classmate lists. People seem to be easing into everything this week as are we. So we will show up and see how it goes and then come home and relax. No clients this evening, so I want get Zoe back on track and try to get these kids in bed a bit earlier. We are still weaning off our summer hours and in two weeks from now I am sure we will be back on track.
