Creamy Pumpkin Soup & Delicious Hot Cocoa!

When it gets really cold during this time of year, what feels better than a nice hot cup of hot chocolate or a bowl of soup to warm you right up? Soups and warm drinks are my type of thing all year round, as I am a coffee in the morning, tea at night, and soup for dinner type of person.

But this post has nothing do to with me. Jenn , someone whom I consider a dear friend, from cookin vegan has been sick the past week. While I can’t do much about that, I dedicate this soup recipe to her. Its so simple that she can make it while curled up in a blanket, but so delicious that it seems like it took hours to make.

30min Pumpkin Soup:

1 c. vegetable broth
3/4 c. pumpkin puree
1/3 tsp. thyme
1/8 c. soy milk
pinch of salt

-Bring the broth, pumpkin, thyme, and salt to a boil and then simmer it form about 30 min.

-Puree it in the food processor and return it to the pan, bringing it back to a boil.

-Simmer it for a few minutes uncovered, and stir in the milk.

-Pour into a bowl and enjoy!

Now with it being the holiday season, nothing accompanies a bowl of soup like hot chocolate. Being vegan, I’ve had trouble looking for vegan hot chocolate brands in a non-vegan community. But that’s ok! Homemade tastes so much better. This recipe is not completely original. I am still kind of new to veganism (been at it for 3 months now) and had never made my own hot chocolate. So I simply modified another recipe to my own liking. But I love it!

Vegan Coconut Hot Chocolate

4 tbsp. cocoa powder(i used dutch)
2 tbsp. agave (or maple syrup)
3 tbsp. canned coconut milk
3/4 tsp. vanilla extract
1 cup hot coconut milk (i used So Delicious)

-Stir together the cocoa powder, agave, canned coconut milk, and vanilla until well combined.

-Pour in the hot coconut milk until your cup is filled almost to the brim.


I also put a square from a vegan mint chocolate bar in here and it turned out delicious! Warm and chocolaty and minty. Definitely a delicious treat. Especially when you drink it out of a santa clause cup with two sweet & sara coconut marshmallows in it!
