Cranberry Orange Quinoa with Garbanzo Beans and Spinach

It was one of those nights where I was searching through the fridge and trying to find stuff that I needed to finish before it went bad. I had some garbanzo beans and a little bit of orange juice that I needed to finish off pretty quick so I threw this bad boy together.

It was mighty delicious, but I think next time the juice of a real orange is or a blood orange is called for. I could tell it was made with store bought orange juice.

Cranberry Orange Quinoa with Garbanzo Beans and Spinach:
1/4 cup Cooked Garbanzo Beans
1/4 cup Quinoa
1 handful Dried Cranberries
1 1/2 Tbsp Orange Juice
1 generous handful Spinach

1. Cook the quinoa in water with a pinch of salt. (Boil in water for about 15 mins, the amount of water you will need is double the amount of quinoa )
2. When it is finished cooking, lower heat to simmer and add in spinach, dried cranberries, garbanzo beans and orange juice. Let cook for about 10 mins or until spinach is wilted.
3. Chow down!
I served mine with roasted yellow squash and zucchini. It is way simple, and waaay tasty.

Roasted Squash:
Cut up squash of your choice into 1/2 inch chunks. Spray pan with olive oil cooking spray, and place squash on pan. Spray top of squash with spray and add a little salt and pepper. Roast in the oven at 400* for about 30 mins, turning over halfway through.
After hearing what I was making, the BF kinda made a face at me, but was still willing to taste it. To his surprise, he enjoyed it quite a bit. I was unsurprised since he is such an avid orange juice lover. I thought it was fantastic and will definitely be making it again. It is an absolute nutritional powerhouse!
