Cran-Apple Muffins

Change is good. It helps us grow, learn new things, keep from getting stagnant. Besides, if we aren't changing at least slightly frequently, we're probably dead.

bummer.

So stop resisting. As the borg say, resistance is futile. (oh yeah, go dorky me!)

I'm not tired of my mini muffins for breakfast, I just wanted to try a change for a little while. And I was getting low on soy flour and hadn't bought replacement yet. So these were created based on the stock of my pantry and fridge and freezer (FYI buy cranberries during the holidays and freeze them!)

 

Cran-Apple Muffins (GFCF)

Ingredients

  • 3/4 cup masa harina
  • 2/3 cup oatmeal
  • 1/3 cup soy flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp nutmeg
  • 1/2 tsp almond extract
  • 1/3 tsp salt
  • 1 egg white
  • 1/2 cup almond milk
  • 1/2 cup unsweetened applesauce
  • 1 tsp lemon zest
  • juice of 1/2 a lemon
  • 1 cup cranberries, coarsely chopped

Directions

  1. Preheat oven to 375. Line muffin tins with liners.
  2. Mix all ingredients together. Fill muffin cups 2/3 of the way full.
  3. Bake for 16-19 minutes.

Yields 12 muffins. Each muffin has ~66 calories.
