Country Living

It’s been so nice spending time in the “country” at Mal’s parents’ house. I always feel so peaceful and relaxed out here. I actually decided to stay another night instead of going back to Boston this afternoon like I had originally planned. It was a wonderful decision!

I took a mini break from blogging today, so I didn’t snap too many food photos. It was nice to “disconnect” for a little while.

After sleeping in and eating breakfast, Mal, Murphy, and I headed to the park.

The three of us hung around the house all afternoon– playing in the yard, watching a movie (Mal and me) and napping (Muprhy).

At dinnertime, we threw together one of Mal’s favorite meals: Croque Monsieur. We used a recipe from the Food Network, which was fairly easy to make and turned out de-lic-ious!  IMG_5929 So much cheesy goodness! The recipe called for both Parmesan and Gruyere.
IMG_5933 Like the French, we ate our salad after dinner.
IMG_5935 And for dessert, I enjoyed coffee ice cream topped with a chocolate peanut butter chip cookie. It was the perfect treat for a warm evening in the country!
