Even though I have to write myself notes to remember to make these, I’m always happy that I do.
It has been too long since I’ve had a breakfast cookie, and this one reminded me why I love them so much.
Last night, I mixed the base of the cookie:
Mix all of that in a bowl until it’s combined, spread it on a plate, and let it sit and wait for you in the fridge until you’re ready to eat
Then this morning, I added on a layer of ricotta, some market peaches + raspberries.
I have a feeling this may start a cookie obsession for a while – these may replace my pancake creations! At least until I get more egg whites, anyway.
Do you have a “food” obsession right now? What can’t you get enough of?
Mine is definitely cold breakfasts (bfast cookies, muesli, smoothies, etc) AND this awesome fruit from our farmer’s market. So good!
