My chocolate of choice has been the reindeer bark . I’ve been having pieces of that every night since I made it. It’s just SO good!! I’ll be kind of glad when it’s gone so I can stop eating it.
I’m much more lax with desserts at this time of year, but at the same time I try to make my meals pretty well balanced. I feel like that’s how I am fitting in the extra desserts. I don’t know if it’s making a difference or not, but I know my clothes don’t feel too different.
I’ve been making different cookies and desserts each day and I have one more to make. I usually make the same things every year, but I switched it up a bit getting some new cookies from different places.
My family and friends ask me how I still manage to bake when I bake so much for Pure Bliss Eats . Honestly, it’s just what I do. My grandma and Aunt Louise would always go NUTS baking for Christmas. Since they aren’t here, it’s just how I deal with the absence of their presence. The more cookies and treats I make, the more I feel like they are with me. The best time of year can also be the saddest at some moments.

With all that said, I baked a new type of cookie last night. These should automatically cheer anyone up!
Combine flour, sugar, cocoa, salt and baking powder in a large mixing bowl. In a separate bowl combine eggs & butter and whisk. Add to flour mixture until it’s all combined. Cover and refrigerate until firm, about 30 minutes. Preheat oven to 325 degrees. Place the confectioners sugar and white sugar on two separate plates. Cover a baking sheet with wax paper. Form balls with small amount of dough and then roll first in white sugar, then in confectioners sugar. Place on baking sheet. After all dough is used, lightly place your thumb in the center of each cookie. Melt chocolate either with a double broiler or in microwave. Fill with chocolate and sprinkle with colored sprinkles if desired. Bake in the oven for about 10 minutes and remove from baking sheet and let cool.
