Cinnamon-Vanilla Chia Seed Pudding

Y’all. It has been a long time since I have fallen in love with a snack, but this is it. I will literally probably have it everyday!! It is SO easy to make, it’s healthy, filling, and DELICIOUS!!

Chia seeds are jam packed with calcium, potassium, and protein!! I will say the first time you eat this pudding to be prepared for the texture, it is VERY similar to tapioca!

Cinnamon-Vanilla Chia Seed Pudding

Serves 2

1 cup milk, any kind you like (I like plain, unsweetened almond milk)

3 tablespoons chia seeds

1-2 packets stevia (more or less to taste)*

1 teaspoon pure vanilla extract

1/2 teaspoon ground cinnamon

1 small pinch sea salt

Stir together all ingredients in a small bowl; refrigerate until it reaches your desired thickness, stirring occasionally.  

I left mine overnight and it was thick enough, and it is SO. DANG. GOOD. Chia seeds are so neutral you could add any combination of spices to this and I’m sure it would be amazing. I’m definitely open to new suggestions!

Y’all seriously need to try this. And it would be super easy to put in ready to go containers and take as a snack for the school day!
