These are not your typical diet foods. No more waiting on the clock to see if it’s time to have a treat. These are so good for you that you can eat them anytime during the day. So snack away on something healthy that will help you lose weight and satisfy the heartiest chocolate cravings.
I love a good snack. But it has to be healthy and quick to fit into our lifestyle. And of course chocolate is always at the top of my list. So these are also gluten free, sugar free and totally organic. You are going to want to throw out your idea of diet foods and latch on to these babies.
Thanks to Katie at Chocolate Covered Katie who gave me the idea for these treats. One of my favorite snack bars is Larabars. They are tasty, healthy and always have just a few ingredients with no preservatives. Plus there’s no words that even Drs I know can’t pronounce. (why would I eat something I can’t even say?). Anyway, back to the subject – a quick treat. I played around with this idea until I had a great chocolate snack. It tastes just like a fudgy, devils food cookie that melts in your mouth. But even better – there’s no baking or mixing. Just pop everything in a food processor. It’s that quick!
This is such a simple, but delicious recipe that I decided to video making them. That’s how fast these are to do.
Here’s the recipe:
- 1 c walnuts
- 1 1/2 cups organic dates
- 3 1/2 tablespoons organic cocoa powder or caco powder
- 1 tsp vanilla extract
- ½ tsp liquid stevia
- 1/8 tsp sea salt
- 2 tsp water
Blend everything in a food processor for about 1 minute. Shape into balls or bars.
I like to refrigerate these for a bit to have them harden up – BUT they rarely last long enough in my house to do that!
For a change of pace roll in ground organic coconut. I promise to post the Oatmeal Raisin Power Bars a bit later. Umm Good!
Refrigerate for storage.
Yields 20 balls (you can double or triple the recipe easily)
These would also make great dessert bites. I placed them in cute mini cups. Decorate them on a tray and dessert is served. Since everyone is my house is going nuts over these I thinking of other ways to use them. Gonna have to try pieces of them in ice cream – oh heaven! I’ll let you know the results later. Thinking of a sugar-free chocolate ice cream with these fudgy chunks. My taste buds are salivating.
Some of my other favorite snack foods that I eat are:
- Dates with almond butter (just dip and go)
- Fresh fruit – whatever is in season. Right now it’s apples and oranges
- Sugar free KettleKorn popcorn – I’ll share the recipe a bit later – yum!
- Snapea Crisps – these are fantastic and one of my favorite store bought treats
- Sweet & Spicey Cashews – another yummy snack that is so easy to make – check back soon for this recipe!
