Molten Lava Cake – enough said. Well almost… This has always been one of my favorite desserts. And with Valentines coming up it’s the perfect ending to a wonderful day. Or you could have it for any special occasion. I’m thinking Monday, Tuesday, Wednesday – ahumm. But seriously, this is so good you’re going to have a hard time just eating one. Thank goodness it makes four!
Molten Lava Cake is the holy grail of gluten-free treats. Trust me, I tried so many times with lots of twists and versions until I finally got one I’m excited to share. It’s really easy to make and the taste is AMAZING. And of course it’s gluten free, sugar free and organic. My mouth is all happy just thinking about the cake. So indulge yourself with this decadent dessert!
1/4 cup almond butter
3 organic egg whites
1 organic egg
1 tsp powdered stevia
2 Tbsp cocoa
1/4 cup xylitol
3 Tbsp cacao chips (70%)
1/4 tsp baking powder, aluminum free
1/4 tsp sea salt
1/4 tsp almond extract
Pulverize xylitol into powder with a coffee grinder. Set aside.
Over double boiler whisk together almond butter, eggs, stevia and cocoa until smooth.
Blend in xylitol and chocolate chips. Keep whisking until all combined and chips are melted.
Take off of heat and blend in baking powder, sea salt and almond extract.
Spray 4 ramkin cups with cooking spray or butter well. Spoon batter into cups. Refrigerate for at least 2 hours.
Preheat oven to 450 degrees. Bake for 9 minutes or until center is soft but not firm. Remove and cool for 5 minutes. Invert onto dessert dish and sprinkle with powdered stevia. Garnish with fresh fruit.
