Chocolate Chip Pumpkin Spice Pancakes

Saturday morning to me means:

…sleeping in until {gasp} 8am

…drinking coffee while leisurely checking my favorite blogs on my laptop

…reading my bible underneath the covers with Dexter curled up next to me

…throwing a load of dirty clothes in the wash because I’ve procrastinated doing it all week

…pulling some bacon out of the freezer and gathering ingredients to make fluffy pancakes, dripping with maple syrup.

Saturday mornings are special. I hope in the future when I have kids of my own, I can keep up the pancake and bacon tradition. My new favorite pancakes? These thick chocolate chip pumpkin spice ones. Oh my, are they ever decadent and delicious.

They make me happy. And bonus? They freeze + reheat beautifully. Just wrap leftover pancakes individually in tin foil and stick ‘em in the freezer for busy weekday mornings. When you’re ready to eat, just unwrap, pop in the toaster, and in a matter of minutes you can enjoy fresh pumpkin pancakes bursting with gooey chocolate chips.
