Chicken Salad and Greens

Good Afternoon:

It has been a wonderful Sunday afternoon and I honestly don't want it to end.... Zoe and I had a little girls afternoon while the boys had to travel to the LaCrosse Game.

We had a nails done, went shopping and baked (I will post later). Zoe is fun to hang out with and she is very much a girly, girl, so I am in for big trouble. She wants to know at what age she can start going to the spa with me! (by the way, I don't go to the spa often, I usually get gifts from my husband for my birthday or Nother's Day) so I am not living the life of luxury!

Lunch today was Chicken Salad and Greens and it was soo good!

I made the Chicken Salad with Fage 2 % Greek Yogurt and a drizzle of olive oil along with some crunchy vegetables. Yum! I have to remember to make this more often.

Chicken Salad and Greens

2 Chicken Breast, marinated and baked, chopped into cubes
1 stalk of celery
1/4 cup of diced red onion
1/2 of cup of orange and yellow bell peppers diced
1/2 cup of Fage 2% Greek Yogurt
1 splash of Olive Oil
1 tsp Lemon Pepper
1 tsp Kosher Salt
A few cracked red peppers

Combine ingredients in a bowl and combine. Chill for 2 hours or overnight for best results.

1 cup of Red and Green Romaine Lettuce Mix
Carrots

Scoop 1 cup of chicken salad and place it on bed of lettuce, add carrots and drizzle with balsamic vinegar.
Dash of Balsalmic Vinegar
