Chicken, Avocado and Caramelized Onion Quesadillas

Chicken, Avocado and Caramelized Onion Quesadillas. Now doesn't that sound good?
Well this was actually a recipe fail! More for user error than anything else so hear me out.
From my first bite I was thinking hmmm, this combination of flavors sounded so good and each separate ingredient was delicious. WHY does it taste so weird now? Hmmm....
On my second to last bite I figured it out. (Yes, embarrassingly it took me that long). It wasn't that it was bad just really weird. It was because I used a rye wheat wrap!
Rye is such a distinct taste and it apparently doesn't compliment chicken, avocado and caramelized onion. This will definitely have to be a recipe redo!
Now say you want to make this the right way with, say a plain wrap like any sane person would do.....
Here's the recipe.
Chicken, Avocado and Caramelized Onion Quesadillas 2 servings
Ingredients
1 lb organic, free range chicken thighs, seasoned, grilled and chopped (you will only need two so reserve the remaining for another use) 1 onion, sliced thinly Organic canola cooking spray 1/4 to 1/2 cup of chicken broth or water Garlic salt and fresh ground pepper, to taste 1 avocado, sliced 1/2 cup organic, reduced fat shredded Mexican blend cheese 2 whole wheat tortillas (or any kind other than rye) Organic sour cream (optional)
Directions
1. Spray a medium skillet with cooking spray and heat over medium high heat. Add the onions and season with garlic salt and pepper. Sauté continuously for about 15 minutes adding chicken broth or water in small amounts to keep the onions from sticking. (We did this while the chicken was cooking).
2. Spray a large skillet with cooking spray and place one (non rye) tortilla in the bottom. On one half of the tortilla, layer 1/8 cup cheese, a few pieces of chicken, half the avocado, half the onions and 1/8 cup cheese. Fold the tortilla in half and cook until just browned on the bottom and then flip and cook on the other side until cheese is melted and that side is browned as well. Repeat with second tortilla.
3. Let cool for a few minutes, slice and top with a dollop of sour cream if you like.
