Cherry Chocolate Trail Mix

Good afternoon!  I woke up this morning with a slightly stuffy nose and feeling like I just might have a cold coming on.  I got up and got the kids off to school then went for a very chilly 4 mile run before Kevin got up for work.  It was 11 degrees when I headed out – my coldest run yet, but it felt great.  I thought winter time running would be more difficult, but once I get moving I don’t even know it’s cold anymore (other than my snot freezing this morning).  After my run, I refueled with a smoothie made with almond milk, frozen bananas, and a scoop of Vanilla Chai Vega Health Optimizer  before hitting the shower.

By the time Lunch rolled around, I was certain that I had a cold coming on.  I made Cameron a Sun Butter and Jelly sandwich and some egg salad wrapped in a whole wheat tortilla with some baby spinach for myself.

Egg Salad Wrap

1 hard boiled egg

1 hard boiled egg white

1 celery stalk

1 T mayo

1 tsp mustard

1 T dill relish

1/4 tspsmoked paprika

1 whole wheat tortilla

Handful baby spinach

Dice the eggs and celery and stir together with mayo, mustard, dill relish, and paprika.  Layer a whole wheat tortilla with a handful of baby spinach and eggsalad and wrap.

About a half hour after lunch I realized I was still hungry.  Most people lose their appetites when they aren’t feeling well, but I am the exact opposite.  I made a cup of my favorite little trail mix.  This recipe is for a single serving, but you can double, triple, quadruple, sextuple, … get the point.

Cherry Chocolate Trail Mix

1/4 Kashi Go Lean cereal

1 T sunflower seeds

1 T dark chocolate chips

1T dried cherries

Just mix and enjoy!  You can sub in any kind of whole grain cereal for this and use any type of chopped nut in place of the sunflower seeds.

I think I will go see if Cameron would like to go lay in my room with me and watch a movie for a little R&R before the other guys get home.  Have a great day!
