Cherry Cashew Cheese + Refueling

Today was the second day of school (woot) and on Mondays/Wednesdays I don’t have class until 1:25. That means, I get to go for a run in the morning :)

I was feeling today. I didn’t think taking 3 days off from exercise would matter, but I’m sure feeling it now. I see some yoga in my future…

I’ve missed my bowls of oatmeal but I never feel like making it in the morning. But yesterday, a bright idea struck:

Why don’t you just make it the night before and then reheat it the next day?


So that’s what I did


Last night, I made a batch of oats with the following:

  • 1/2 cup rolled oats
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/2 scoop Jay Robb Vanilla Brown Rice Protein
  • 2 Heaping spoonfuls shredded coconut
  • 1 Heaping spoonful ground flax

In the morning, all I did was add another splash of almond milk and topped it with goldenberries


Those little berries have a tang to them!

Then, I had to go to Parking Services & get a permit for the semester. I got away with parking illegally all of yesterday which is surprising because VT’s parking police are .

After digesting a bit, it was time to run! The song of the day was:

Lady Gaga & Beyonce – Telephone

…the lyrics are pretty stupid, but it has a great beat :cool:

I mentioned yesterday that running really suppresses my appetite, but for some reason I came home famished. This is why I love the freezer/refrigerator. Just heat + eat


First was a Chickpea Sensation patty covered in Dijon mustard


And a side of roasted brussels (eaten cold)


The brussels were dipped in the most  dollop of deliciousness

That would be Gena’s Cashew Cheese with Lemon and Dried Cherries.

O.m.g was this good. I wouldn’t exactly title this a “cheese” because I didn’t really taste any cheese-like flavors. It was more like a thick, sweet, creamy dip. I loved the hint of lemon + the chunks of dried cherries.

Lunch part 2 included yogurt topped with kiwi slices and wheat germ


A little random, but oh so good ;)

Then it was off to my 3 classes of the day: Communicating with Food, Ecology, and Public Speaking <—I’m getting nervous just thinking about it :?

Classes went well but I had to do a lot of power- walking. I have 15 minutes to get from one place to the next so I’m across campus. Sorry if anyone waved to me or said “Hi” and went unnoticed…I was on a mission.

Dinner incorporated almost every veggie that was stocked in my fridge- assembled in a lovely hot salad fashion


In the bowl:

  • Steamed spinach
  • Grilled peppers, yellow squash, mushrooms, onions, & brussels
  • White Beans
  • Tempeh White Bean Sausage Patty
  • Mary’s Crackers

I devoured it.

Dessert could have been a number of different things but all I wanted was…


Protein ice cream. Topped with crunchy sun-nut butter and sprinkled with dark chocolate covered cocoa nibs. Perfection

*I also just wanted to clarify something that I’ve stated before. I picture everything I eat! I realize that I’m getting a few more readers (hey!) and I don’t want anyone to compare their food intake to mine. If you want me to be perfectly honest, I’ll list what isn’t pictured:

  • A Cherry Cashew Pure Bar
  • 2 homemade protein bars
  • A large bowl of cinnamon puffins with almond milk
  • Dark chocolate chips
  • Another heaping scoop of cherry cashew cheese

If I eat a lot of veggies (as pictured above), then I have to eat a little more to sustain my energy. I think it’s so important to re-fuel after exercise!

Well, I should probably get cracking on my homework. But before I go…

My dad is the one who inspired me to start running & he’s running the marathon with me in June! How many people’s dad’s can do that?!?
