Cheeky Vegan Vegetable Soup + Exciting Opportunity To Transform Your Life!

Posted Sep 17 2012 7:22pm

The weather is turning a bit cooler here in Connecticut with sunny warm days and cool evenings, and I can tell the Fall is almost upon us. I am super excited for the famous changing of the leaves here in New England which is apparently truly magnificent. We are even taking a trip to Vermont for my birthday in October to enjoy the beauty of the trees in all their gold and red glory. I can’t wait!

What I can wait for is the freezing cold Winter ahead… ;) . I have a feeling that even the four years I lived in London and few trips I took to Canada and New York in the Winter months haven’t even come close to preparing me for the grim cold!

It’s a good thing I know how to make a wickedly creamy veggie soup! It’s also a good thing I am sharing it with you today…I think you’ll want to try it out too and enjoy the warm coziness that ensues.

Not only is this recipe extremely simple to make and deliciously creamy, it even sneaks in a good quantity of raw leafy green vegetables (that’s why I called it “Cheeky”!) – the ultimate in plant nutrition for their easily absorbed protein, high levels of many vitamins, antioxidants and minerals, and chlorophyll. While it makes the soup a pretty, vibrant green colour, it doesn’t affect the taste at all.

Before I share the recipe with you, I have an exciting and transformational opportunity to share with you from my wonderful, inspiring friend and fellow Health Coach and Aussie Jessica Ainscough.

Jess and I first connected a few years ago when we guest blogged for each others websites and connected over a shared love of plant based nutrition, natural health and healing, and living our very best life, and importantly, helping others to do the same. Jess has spent the last seven months pulling together her brand new The Wellness Warrior Lifestyle Transformation Guide and I am beyond happy to be sharing news of it with you here today.

I know Jess well and know how high integrity, authentic and knowledgeable she is and how much time and effort she has put into creating this program.

As a Health Coach who works with clients internationally one on one and in online programs on similar topics to those covered in the Guide already, I obviously believe very highly in it to recommend it. My 3 week Discover Detox clean eating program (whole and raw foods and emotional support) and 10 day Get Juicy Cleanse program are extremely popular and get amazing results but I don’t currently have a program like The Wellness Warrior Lifestyle Transformation Guide on offer…thus why I am recommending it to you here!

If there’s one thing we all have in common, it’s a desire to look good, feel healthy and be happy. But here’s the thing: transformation isn’t about willpower & discipline. It’s about kindness, respect & unconditional forgiveness. It’s about deciding that your life — your BEST life — is worth fighting for.

I am very happy to be part of The Guide (you will see me and my wisdom inside), as are many of my colleagues who I respect, and help my friend Jess spread the word about her brand-new signature online coaching program.

The Guide offers you a whole world of information & support, for anyone who wants to look & feel better, heal their bodies from stress & disease, and treat themselves with absolute kindness & respect. The Guide covers health and lifestyle transformation must-knows in 12 steps, and gives you an online community resource to visit over and over as you progress through the steps and change your health and your life.

+ You are in pain — plain & simple. Whether it’s a massive wake-up call — like cancer or diabetes — or just a perpetual feeling of creakiness, irritation & exhaustion. Pain is your body’s way of communicating that it needs something different — and it’s your job to listen, and respond with love.

+ You have a MASSIVE desire to make changes, feel better & live your life differently — even if you haven’t figured out how you’re going to find the time (and commitment) to do it, just yet.

+ You’re tired of navigating conflicting information, skip-hopping around from diet to diet, starving yourself on self-destructive fasts, and feeling ALONE in your quest for real health.

+ You just want to feel GOOD! You want a life of smashing energy, conscious & wide-awake decision-making, and zero drama. You secretly believe that life is supposed to be easy. And you’re yearning to be proven right.

Intrigued? Click on over to and explore Jess’s gorgeous site, learn more about what’s inside The Guide, and get inspired by the advance praise.

If you decide that The Guide is for you, and you purchase it between now and 18 October you will go in the draw to win either a Vitamix (worth $995) or one of 10 runner up prizes.

Now for my hearty veggie soup recipe that I’ve been enjoying many days of the week.

Cheeky Vegan Veggie Soup

1/2 head of cauliflower, cut into florets

1 head of broccoli, cut into florets

1 small sweet potato, skin scrubbed and cubed

1/3 large red onion, diced

3 stalks of celery, diced

3 cloves of garlic, diced

1 tablespoon of coconut oil

1 tablespoon of fresh thyme, rosemary and sage leaves (not stalks)

1/2 tablespoon of dried oregano

1 tablespoon of cumin

1/2 teaspoon of cayenne pepper (more or less to taste)

Back pepper and sea salt to taste

2 tightly packed cups of baby spinach leaves, raw

1. Saute the garlic, celery and onion in the coconut oil in a large pot.

2. Once cooked through, add the remaining vegetables and fresh herbs (except the raw spinach, seasonings, spices and dried oregano) and cover with boiling water.

3. Bring the soup to the boil and then turn it down to simmer until the vegetables are tender (test the sweet potato by piercing with a fork).

4. Add the dried oregano, salt, pepper, cayenne, raw spinach leaves and cooked vegetables into a blender with one cup of the water from the pot. Holding the lid down carefully, blend the soup until combined. I like to leave mine a little chunky and very thick. If you prefer it thinner, add as much water as you like until you reach your desired consistency. It might take you a few batches in the blender to blend all the soup. Alternatively you can add the spinach into the pot after draining out some of the water and use an electric hand blender to blend.

5. Adjust seasonings to taste and serve wrapped in a cozy blanket…I know, it’s hardly that cold but it still feels great :) .
