Cheeky Vegan Vegetable Soup + Exciting Opportunity To Transform Your Life!

The weather is turning a bit cooler here in Connecticut with sunny warm days and cool evenings, and I can tell the Fall is almost upon us. I am super excited for the famous changing of the leaves here in New England which is apparently truly magnificent. We are even taking a trip to Vermont for my birthday in October to enjoy the beauty of the trees in all their gold and red glory. I can’t wait!

What I can wait for is the freezing cold Winter ahead… ;) . I have a feeling that even the four years I lived in London and few trips I took to Canada and New York in the Winter months haven’t even come close to preparing me for the grim cold!

It’s a good thing I know how to make a wickedly creamy veggie soup! It’s also a good thing I am sharing it with you today…I think you’ll want to try it out too and enjoy the warm coziness that ensues.

Not only is this recipe extremely simple to make and deliciously creamy, it even sneaks in a good quantity of raw leafy green vegetables (that’s why I called it “Cheeky”!) – the ultimate in plant nutrition for their easily absorbed protein, high levels of many vitamins, antioxidants and minerals, and chlorophyll. While it makes the soup a pretty, vibrant green colour, it doesn’t affect the taste at all.

Now for my hearty veggie soup recipe that I’ve been enjoying many days of the week.

Cheeky Vegan Veggie Soup

Ingredients:

1/2 head of cauliflower, cut into florets

1 head of broccoli, cut into florets

1 small sweet potato, skin scrubbed and cubed

1/3 large red onion, diced

3 stalks of celery, diced

3 cloves of garlic, diced

1 tablespoon of coconut oil

1 tablespoon of fresh thyme, rosemary and sage leaves (not stalks)

1/2 tablespoon of dried oregano

1 tablespoon of cumin

1/2 teaspoon of cayenne pepper (more or less to taste)

Back pepper and sea salt to taste

2 tightly packed cups of baby spinach leaves, raw

Directions:

1. Saute the garlic, celery and onion in the coconut oil in a large pot.

2. Once cooked through, add the remaining vegetables and fresh herbs (except the raw spinach, seasonings, spices and dried oregano) and cover with boiling water.

3. Bring the soup to the boil and then turn it down to simmer until the vegetables are tender (test the sweet potato by piercing with a fork).

4. Add the dried oregano, salt, pepper, cayenne, raw spinach leaves and cooked vegetables into a blender with one cup of the water from the pot. Holding the lid down carefully, blend the soup until combined. I like to leave mine a little chunky and very thick. If you prefer it thinner, add as much water as you like until you reach your desired consistency. It might take you a few batches in the blender to blend all the soup. Alternatively you can add the spinach into the pot after draining out some of the water and use an electric hand blender to blend.

5. Adjust seasonings to taste and serve wrapped in a cozy blanket…I know, it’s hardly that cold but it still feels great :) .
