Celiac disease, long a mystery to the general public has now jumped into the spotlight. Many people who previously had no idea what gluten even was now buy gluten-free food items due to large advertisements in grocery stores for gluten-free products and enthusiastic endorsements from star followers of the diet such as Gwenyth Paltrow and Elisabeth Hasselbeck.
With gluten-free cereal, pizza, bread, and dessert products now featured on store shelves from large household companies it is no surprise that people are becoming more informed to the health and diet benefits of eating gluten-free. People can struggle for years with Celiac but attribute the symptoms to irritable bowel syndrome, acid reflux, or other common stomach/bowel afflictions. Once they are properly diagnosed and begin to follow the diet the symptoms can all but disappear.
