Carrot Curry Soup topped with Hemp Hearts

Good Evening and Happy Tuesday!

 It is beginning to feel like Fall which means I am in the mood for soups, stews and baked apples!

Curried Carrot Soup with Hemp Seeds
Serves 4
2 tbsp olive oil1 20-oz pkg, grated carrots (8 cups)2 large leeks, light green and white parts thinly sliced (2 cups)1/4 tsp plus 1/8 tsp baking soda1 tsp curry powder1/4 cup hemp heartsdrizzle of olive oil
  1. Heat oil in large pot over medium-high heat.  Add carrots, leeks, and baking soda.  Cover and cook 15 minutes, stirring occasionally, or until vegetables are tender and browned in spots.  Stir in curry spice, and cook 30 seconds.  
  2. Add 4 cups water and bring to a simmer.  Remove from heat, puree with immersion blender and season with salt, if desired.  
  3. Serve sprinkled with a drizzle of olive oil and 1 tbsp of hemp seeds per bowl.

My new love - Hemp Hearts!  I have been sprinkling these babies on everything.  Oats, salads, soups, and yogurt.
