Interesting question. It sounds like your husband is having mucus buildup in his throat when eating black pepper. However, it could also be the food he is eating that is causing the mucus. In that case it would indicate a sensitivity to the food he is eating
But if it IS the Black Pepper here are 2 contradicting scenarios.
1)Black pepper helps dissolves mucus. It is used in some remedies to help with that.
2)Black pepper is also acidic. When taken in large quantities it could be offsetting his mineral balance and create mucus.
Hard to say. Try and have him go without black pepper and hot shot pepper for a week and see if he still clears his throat while eating.
