Sure, Sylvia. Peel the pineapple and cut it either in slices or in chunks. Then, spread the pieces on a cookie sheet (or something flat that will fill in your freezer) covered with wax paper, and quick-freeze for 2 hours. Transfer the frozen pieces to a freezer bag. Doing it this way, you will avoid all the pieces sticking together and it will be easier to take out just the portion you need. You can also freeze in smaller baggies, for individual portions. Yum!
