Cabbage: The Lowly Superfood

What do you think of when you think cabbage? Boring? Stinky? Have you ever bought a head of cabbage? This member of teh cruciferous vegetable family is low in caloires, high in fiber and full of a cancer fighting chemical called sulforaphane. But how do you eat it? Add cabbage to salads, and not just cole slaw. Add it to your regular lettuce based salads for extra crunch and flavor. (The purple variety is gorgeous for adding color.) It's great stir-fried too. And you can always make soup!

Stir fry finely chopped cabbage with peas. They make a great combination and are one of my favorite veggies.
