I have managed to drop or nearly drop just about everything I've touched tonight, including an entire (closed, thankfully) container of ground ginger between the counter and the wall, rendering it completely irretrievable. Bummer. It's just one of those days, I guess!
The only changes I made to the recipe were to substitute chicken broth for vegetable broth (that's what I had on hand) and apple cider vinegar for sherry vinegar (also what I had on hand). I also splurged and bought manchego cheese to stir in, one of my favorite foods from my semester abroad in Madrid. So expensive, but holy moly, manchego is the cheese to end all cheese. Try it sometime if you haven't already - you won't regret it!
This recipe didn't rock my socks off - it was a tad bland, so I ended up adding a splash more vinegar than it called for, plus I got my grind on with the pepper mill - hardcore. Once I made those additions, it tasted pretty darn good. Nonetheless, it's a very light dinner. I took advantage by whipping up a bowl of something not so light for dessert. Well, I started with just this:

Why stop at chocolate coconut milk yogurt when you have things like PB Puffins, chocolate chips and Dark Chocolate Dreams peanut butter just sitting around, staring you in the face?!
