It’s been another whirlwind weekend- so I apologize only one post!
Friday Night
The weekend started with a trip to Grendel’s Den with Brita and two of my fellow interns –Katie & Marissa!
I ordered the Mediterranean salad- it was just how I remembered it to be- simple and delicious!
I also ordered the Peruvian stew(squash, tomatoes, and onions) on top of quinoa covered in cheese and cilantro- it had a perfect flavor!
We had a great time together and you’ve got to love Grendel’s half price menu from 5:30-7:00 
Saturday
Saturday just flew by – with me working on my PowerPoint presentation for Monday(I’m almost done), trips to grocery stores, and lots of chores around the house.
Then that evening, we took a trip over to JP to Nyssa & Ben’s house.
I made a fig, goat cheese, and apple bake for appetizers at their house… it turned out pretty well. But, still needs some work before the recipe makes it on MFR!

I couldn’t make it to a photo shoot this week for Simmons so they asked me to take a picture for one of their brochure this weekend- thanks to Nyssa I got it taken right when we got to their house
I hope they like this one!
After a great round of laughs at the house, we walked over to Canary Square for dinner.
CS is a great hangout in JP & the food looked pretty good too. But, their gluten free options are minimal. I had the mussels- which were good but not great! They needed a little extra something. I’m not going to give up on this place though- I’ll be back soon to try it again!

I’ve been working on my presentation all day- for breaks I’ve walked with Carrie and cooked
Our dinner menu:
- homemade bread
- lentil & sausage soup
I tried to make bread- note the round FLAT mound below. This is what happens when a family member sends a wonderful gluten-filled bread recipe and I decide I will try to make my OWN version. Gluten free mound 1, Meg 0!
Thank goodness I had made lentil & sausage soup to have with the bread. I love this recipe- it’s just soo good!
But the best part is it makes enough for the whole week! Woo hoo!
I’m off to practice my presentation one more time- wish me luck!
