Buffalo chicken casserole – gluten free, sugar free & organic recipe

It’s football time in case you haven’t heard.  The Super Bowl is always a perfect time to get together with friends and family.  Unfortunately our Carolina Panthers didn’t make it to the playoffs (maybe next year) – but that doesn’t mean we’re not going to celebrate and have a good time.  And what’s a party without the great food?  Well, have no fear.  We’ve come up with a great organic, sugar free & gluten free version of this popular dish.  This Buffalo Chicken Casserole recipe is sure score a TOUCHDOWN with everyone’s taste buds!

My husband’s aunt made this original recipe that everyone loves.  So I thought I would remake it with some healthy ingredients that everyone can enjoy.  It’s so easy and a huge crowd pleaser.  We eat this for a main course or you can use it as a “dip” for taco chips and veges.

If the way to a man’s heart is through his stomach then he’s gonna love you for this one.  It has all of the ingredients to please your hungry football fans – but with a healthy twist that they will never know.

  • 4 boneless, organic chicken breasts, cooked & shredded
  • 6 ounces Texas Pete (or any no-sugar hot sauce) – use 12 oz for extra spicy
  • 16 ounces organic, no sugar ranch dressing
  • 8 ounces organic cream cheese
  • 1/2 cup chopped organic celery
  • 8 ounces organic shredded cheddar cheese

Place shredded chicken in 9×13 baking dish.  Sprinkle hot sauce over the top.
Heat together ranch and cream cheese until melted.  Pour over chicken mixture.
Top with celery then cheese.  Bake at 350 degrees for 30 minutes.

TIP:  Can’t find a healthy ranch dressing?  Make your own it’s super easy starting with our Mayonnaise  as the base.

Just looking at this makes me want to run to the kitchen and make some of this casserole.
