Broccoli and Kale Spaghetti Squash with Creamy Avocado Sauce + Clorox Back-to- School Kit

Good Morning and TGIF!


This is going to be a GREAT day.  I get to pick up my boy from camp at 6:00pm. Yaa!  I can't wait to get the full report and to reconnect with him. 

Zoe and I had a great day yesterday.  We went shopping, swam for 2 hours, packed and made a delicious dinner with one of Zoe's favorite veggies- Spaghetti Squash.  She likes to eat hers straight up with a little butter.  I needed to use up some of my veggies before we go out of town so came up with a delicious Broccoli and Kale Spaghetti Squash and then topped it with a Creamy Avocado Sauce.  Oh my, this was good.  I am learning that some of the best dishes come from just using what is in the pantry/fridge. 



Broccoli and Kale Spaghetti Squash with Creamy Avocado Sauce
1 cup broccoli, chopped1 cup kale, chopped1 tsp extra virgin olive oildash of cracked red pepper2 cups spaghetti squash
Preheat the oven to 375 degrees. Split the spaghetti squash and scoop out the seeds.  Spray a baking dish with cooking spray.  Place the spaghetti squash cut flesh side down and bake for 30 minutes or until the squash is fork tender and can shred easily.   In the meantime, heat the olive oil and cracked red pepper flakes in a large skillet and saute broccoli and kale until just tender-8-10 minutes..  Mix the shredded Spaghetti Squash into the broccoli and kale mixture and top with Creamy Avocado Sauce.   

Creamy Avocado Sauceadapted from Oh She Glows
  • 1 medium sized ripe Avocado, pitted
  • 1/2 lemon, juiced + lemon zest to garnish
  • 2-3 garlic cloves, to taste
  • 1/2 tsp kosher salt, or to taste 
  • 1/2 tsp fresh cracked black pepper
  • ~1/4 cup Fresh Basil, (probably optional)
  • 2 tbsp extra virgin olive oil 
Meanwhile, make the sauce by placing the garlic cloves, lemon juice, and olive oil into a food processor. Process until smooth. Now add in the pitted avocado, basil, and salt and pepper. Process until smooth and creamy.


This meal was super satisfying and filling and loaded with veggies, dark leafy greens and good fats.

 We are traveling tomorrow so am excited to use these on our trip.  I won't have to spend a bunch of money in the airport on food that is just so-so.



I also plan on bringing the Brita Bottle Water Filtration System sans the water before going through security.  These are great and I will be picking up 3 more for the rest of the family.
