Second, Breakfast pizza! In an attempt to include fruits and vegetables with every singe meal, you’ve got to get creative. So, yesterday morning, with literally no fruits and vegetables left in our house except frozen, we created some breakfast pizza’s.
1 lightly toasted whole wheat tortilla
Fruit (berries thawed)
Coconut (sprinkled on top)
You can eat cold, or place the whole pizza in the oven to warm it through.
Important when you are buying whole wheat tortilla’s. You can of course make your own , but if not, look for the number of ingredients! Remember the golden rule. If there is less than 5 ingredients in your store bought version, it’s probably pretty safe. If there is a long list of ingredients you can not pronounce, stay away. Check for fiber content and avoid added sugars (tortilla’s don’t need sugar!)
Ok, I’m off to finally take my Independent Study Psyc Final this morning. I can’t tell you how excited I am to finish this class that has been hanging over my head for a whole YEAR!! I feel like at 10am, my life can finally begin!
