Here’s a quick and easy recipe to use the kale that might be in your csa basket or that you picked up from the market.
One bunch of kale, washed, trimmed of tough stems and chopped.
One can of diced tomatoes with italian seasoning or chopped fresh tomatoes.
1-2 ounces fresh goat cheese.
Heat small amount of olive oil in a large saute pan over medium high heat. Saute kale briefly until it turns bright green. Add tomatoes with juices, cover and simmer 5-10, or until desired tenderness. Turn off heat and stir in cheeses until melted and blended. Enjoy!
