Yes, I've been a bad, bad, bad blogger.
But I have an excuse! Surgery and sloooooooooow recovery, plus a lovely topping of fever with a side of body aches. HOORAY!
So I had the gallbladder out, had a really bad pain-spasm-cramp episode that sent me to the ER, and have had a terrible time getting the air/gas they pump you full of for a laparoscopy out. You just have to wait basically. But anyway, the body aches and fever is likely a virus my weakened immune system picked up either out and about or at the ER. I was doing better, but its back today.
Anyhoo, needless to say, I'm still having to stick of a tummy-friendly diet and take it slow. No experimental cooking these days...bummer.
But I'll be a guide and direct you to some good blogs!
For you non-GFCF chefs, I'd like to share a site of a previous employer who is an AMAZING cook. P can create some delicious things, many of which I can't eat, but have heard high praise regarding. I mean, just look at these Cappuccino-Frosted Brownies -
She also is good at doing "quick-n-easy" meals. Check it out -- Let's Eat.
For my GFCF readers, I won't lie. It is so hard to choose!! There are soooo many to choose from. So here are a couple:
- The Crispy Cook has a great blog, with a recent recipe for stuffed grape leaves I'm very tempted to try. But also a bit intimidated...
- Karina's Kitchen is a classic GF site with lots of delicious recipes and adaptations for other dietary restrictions. I just visit her blog and drool. Currently, her Blueberry Corn Muffins
(look at that delicious picture) and Summer Peach Cake look absolutely divine. Yum.... okay, gotta stop before I need to wipe the drool off my keyboard.
- FatFree Vegan doesn't have only GFCF recipes, but currently there is one on her blog that I think looks AMAZING. It might be because I'm a diet-conscious Southern girl....take a peek at her Oven-Fried Green Tomatoes.
Anyway, enjoy and hopefully I'll be back to baking in no time.
