I love making snacks. My wife hosts a monthly book club that meets on the final Friday of every month (FYI, the book this month was “Jane Eyre”). We have a blast sitting around with friends, talking. I loved it this time especially because it gave me an opportunity to produce copious amounts of snacks.
I whipped up some whole wheat orange & lemon poppy seed muffins! I was worried about losing the orange flavor in these, but they turned out great. My trick is to zest the oranges and the lemon, and to smash the whole peeled oranges in your fist, and add both their juice and their pulp. When you bite into the muffins, occasionally you’ll get a small chunk of orange.
This was probably the most exciting thing in the day for me. I made my first batch of almond butter! For this batch, I roasted them with brown rice syrup (my first time working with it – market special at the store), My blender wasn’t happy with me (we don’t own a food processor YET). However, I have to say that the flavor turned out quite good.
Finally, we set out some pita chips with two different kinds of homemade hummus: Rum apple , and black bean .
It was an epic night. We sat up and talked until about 11:30. It was a lot of fun to do that on a Friday night. Unfortunately, Michelle and I realized in the late hours that we hadn’t done our workout yet (we’re doing Turbofire, currently). So did we skip it? Heck no. We won the day, big time!
