Dinner tonight was one of my all time favorites. I am a huge fan of Boca Burgers and have not really found any other veggie burger as good as the Original Vegan Boca Burger. Each burger has only 70 calories, 0.5 grams of fat, 4 grams of fiber and 13 grams of protein. You just can't beat that and they are delicious. I also find them to be extremely versatile. I love to eat them for lunch and dinner but they are so low in calories that you can make a very filling snack by making an Open Face Boca Burger.
Open Face Boca Burger 1/2 Food for Life 7-Sprouted Grain English Muffin- 80 calories
1 Original Vegan Boca Burger- 70 calories
1 Veggie Slice Cheese- 35 calories
185 calorie snack.
Tonight I made an Avocado Salsa Boca Burger with Confetti Slaw and a few Food Should Taste Good Sweet Potato Chips. So good!
Avocado Salsa Boca Burger
1 Boca Burger
2 tablespoons fresh avocado, mashed
1 tablespoon salsa
Sprouts
1/2 Food For Life Ezekiel Sesame Hamburger Bun
Confetti Slaw 1 cup Mann's Broccoli Slaw
1/2 cup Matchstick Carrots
1 tablespoon Apple Cider Vinegar
1 tsp olive oil
salt and pepper
Handful of Food Should Taste Good Sweet Potato Chips
This was a super good dinner!
