I’m not sure who exactly invented coffee cake, but I would really love to give them a big high-five.
I mean, cake that you can legitimately eat for breakfast?
Genius.
This blueberry coffee cake was a standby growing up, it was among the delicious treats that my Grandma would whip up on the regular. See that recipe up there? It’s part of one of the most treasured books I own, a hand written collection of her wonderful treats. She had pretty wonderful penmanship, didn’t she?
This recipe is actually one of the first that I learned how to make. Grandma often prepared it in the afternoon so that it would be ready as an after school snack for my siblings and I, but when I was still too young to go to school, I got to help her make it.
I was usually in charge of sprinkling the cinnamon and sugar on top or doing some stirring.
You know, the really important stuff.
This pan full of cinnamony joy would be the perfect addition to anyone’s Christmas morning.
It could also be the perfect addition to a Monday morning, or 3 pm on a cloudy Thursday afternoon.
There is no wrong time for Zillah’s Blueberry Coffee Cake.
