Blueberry-Banana Bread

This is an absolute masterpiece!

Sorry for the poor photo quality, my digital camera broke on me and I had to resort to using my iPhone camera which, unfortunately, does not seem to compare to my lovely Canon which I miss dearly :( .

Anyways, I had this breakfast to cheer me up!


  • Overnight Oats (I used old fashion rolled oats, unsweetened almond milk, half a mashed banana, and some cinnamon and cocoa powder
  • 0% Greek Yogurt
  • Honey or Agave (I used honey)
  • fresh blueberries
  • Chia Seeds


THE BEST! so delicious and healthy its insane. Just layer up and enjoy.

For dinner had a healthified potato salad (photos coming later), and made a blueberry-banana bread for desert.

It is quite delicious I must say! This recipe is adapted from the fat free vegan kitchen (which is amazing by the way). You can check the original out here:

Blueberry-Banana Bread

3 large over-ripe bananas
2 tablespoons lemon juice
1/3 cup (80 ml)  unsweetened apple sauce
1/2 cup (120 ml) agave nectar
2 cups (240 g) whole wheat flour
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup (240 ml) blueberries

Preheat oven to 350F. Spray or wipe a 9×5-inch loaf pan with oil.

In a large bowl, mash the bananas and add the lemon juice, apple sauce, and agave nectar. Stir well to combine. In a separate bowl, combine the flour, baking powder, soda, and salt. Add the dry ingredients to the banana mixture, and stir just until the mixture is well-combined. Fold in the blueberries.

Spread the mixture evenly in the prepared pan and bake until a knife inserted in the center comes out clean, about 50-60 minutes. Allow to cool before cutting and serving.

You can add things like Cacao nibs, cinnamon, or whatever you like! :)
