Blue Corn Tortillas the Healthy Way to Go

Next time Mexican food night rolls around, try to add a little color to your fare with blue corn taco shells or tortilla chips. Mexican researchers have found that blue corn tortillas have 20 percent more protein than white corn tortillas, as well as less starch and a lower glycemic index—which means sugar is absorbed into the blood more slowly and doesn’t cause spikes in blood sugar and energy the way high-glycemic index foods do. The blue color of the tortillas arises from compounds called anthocyanins, which can also be found in berries and red wine.
