I hope everyone has had a successful week. We survived, TAKS, Field Trips and Track and Field day at school this week and decided to celebrate at Blue Bamboo Viet-Thai Grill, or I should say some of us did because Emmet is actually off at a sleepover B-Day Party. So we celebrated with Zoe tonight and she picked the restaurant. It was sort of funny just being the three of us, it never seems like we just have Zoe alone and she was eating it up.

We also shared an order of Shrimp Spring Rolls with Peanut Sauce, this is one of my favorites and I go light on the sauce.
I order the Chicken Pho and it was fresh and delicious and just what the doctor ordered. I have been fighting a cold this week and I really did feel better after eating this soup.
I ate most of the chicken and the broth and left all the noodles. It was fresh and delicious.
Especially when I added the fresh cilantro + basil, mung beans, lime and jalapenos. I added a couple of drops of Srirachi sauce to the dish as well and that really opened up my passages.
Zoe ordered a Chicken Noodle kids dish that she loved.

This is our Wok-tossed rice noodles with Thai chili, fresh basil, garlic, tomatoes, and bell peppers, and chicken.
This is a local restaurant that I have passed a million times but have never tried and it was very good. The food was fresh and the price was right so we will have to go back and take Emmet with us, he will be jealous that we went out to eat without him.
My spring cleaning has been coming along and I have vowed to be concious of my consumerism going forward. I have thrown out and given more stuff away in the last few weeks and I have not even lived in this house two years. The house is now de-cluttered and streamlined and looking pretty good. I need to do this more often.
So I have been busy working, cleaning, working out and eating these past few days. A few of the highlights have been:
My morning bowl of Whipped Banana Salba Oats. It has been a few days since I had had any oatmeal and my body was craving a big ol' bowl of comfort this morning.
Oatmeal makes me so happy. It really does, as well as, banana. I really can't go a day without one. So this mornings combo was super-duper.
Whipped Banana Salba Oats
1/2 cup rolled oats
1/2 cup Mootopia Skim Milk
1/2 cup water
1 tbsp Salba Smart
1/2 banana, sliced
Combine above ingredients in small pot and cook over medium heat for 4-5 minutes. Spend 1 minute "whipping" the banana into the oats, then remove from heat and top with:
fresh blueberries and raspberries
1 tbsp sliced almonds
Another highlight of the week was my new beloved
Apple, Garbanzo, Blue Cheese Broccoli Slaw Salad.
I whipped up a batch of Broccoli Slaw Salad to have on hand this week and then I topped it with crunchy apple, blue cheese and almonds to zip it up a bit.
Broccoli Slaw Salad
1 package Mann's Sunny Shores Broccoli Slaw
1 can garbanzo beans
Dressed with 1 tbsp dijon mustard, 1 tbsp balsamic vinegar and a splash of olive oil.
Dinner last night was Cilantro Lime Tilapia over a bed of sauteed Swiss Chard.
Quick and delicious and very filling.
I have been getting my running in the last few days but need to do my weight circuit and am contemplating doing it right now. Because I forgot to mention that we stopped at Yogurt Planet for a little fro-yo treat! It has been a good couple of days of eats and suspect that there might be more in store for the weekend. TGIF!
