Prior to the new year, My Blog Spark offered me the opportunity to use my creative juices to create a recipe using Pillsbury Crescent Rolls. Well time slipped away from me and I had totally forgotten about it until this morning when I was rummaging through the fridge for something new to make for breakfast and found a tube of crescent rolls.
I had remembered that one of the recipes that had come along with this opportunity was a wrapped brie. Well I definitely didn’t have any brie in the fridge, but I did have one soft cheese, low fat cream cheese, which came into play.
But the block of cream cheese was just going to be too much for me, plus I just like bite sized things, so I cubed up the cheese. But I knew that was going to be too plain. As I rummaged through my spice drawer, it came to me, I should use my favorite combo, sugar and cinnamon.
Sprinkling the insides and the outsides of the dough, these were quickly assembled and put into a 350 oven to bake for 10 minutes. They were crunchy and creamy. J totally fell in love with them, and kept calling them blintzes. I have to say that they were pretty good with fruit on the side. I can definitely see making these again, maybe adding some strawberry jelly inside… Oh the wheels are already turning!
