Black Quinoa, Tomato, Basil and Avocado Salad

Good Morning and Happy Saturday!

I made the best summer salad last night and am so excited to share it with you today!  I highly recommend this quick and easy salad and think it is the perfect dish to take to a summer picnic.  I know we are a few weeks away from the official start of summer but I am just going to jump right in to my favorite season of year.

Black Quinoa, Tomato, Basil and Avocado Salad

1 tbsp extra virgin olive oil 1 cup black quinoa 1 1/2  cups water 2 tomatoes, diced 1/4 cup fresh basil, thinly sliced 1 avocado, diced 1 tbsp extra virgin olive oil 1 tbsp balsamic vinegar sea salt and black pepper
For a more defined texture of quinoa, heat 1 tbsp olive oil over medium heat and add quinoa. Saute for a minute or two before adding the quinoa to 1 1/2 cups water. Bring to a boil, then reduce heat and let simmer until all water has evaporated.  Fluff with a fork.
In the meantime, add chopped tomato and basil to a medium sized bowl.  Add olive oil, balsamic vinegar, sea salt and black pepper  Once quinoa is cooked add it to the bowl and give it a quick stir.  Add avocado and stir again.    Serve warm or cold.  Either way this is delicious!!

I love this dish and it was so easy to make.
It is a gorgeous day here and we are off to the PSU Farmer's Market!  I have yet another food project that I am looking forward to making this weekend:)
We also need to buy the kids some new summer duds (clothes).  It is funny how quick these kiddos grow.  They need to stop!
Anyhow,  I am off to get cleaned up for this day of fun with the family.  Check back tomorrow because I am wee bit excited about my food project.
