Black Bean and Zucchini Quesadilla

Good Morning!

I am going to give a quick recap of the end of yesterday's eats, I got detained on the phone last night and then the night just got away from me. So yesterday, I had a wonderful snack of:

1/4 cup of Fage 0% Greek Yogurt
1 cup of cut cantaloupe
9 raspberries
1/2 cup of Go Lean Cereal

Awesome and filling snack!




Dinner was a delcious Black Bean and Zucchini Quesadilla. I wanted to use up the black beans that had been marinating in lime juice, cumin and garlic from the Taco Salad the other day so decided to make a Black Bean and Zucchini Quesadilla.

Black Bean and Zucchini Quesadilla

1/2 cup of black beans
1/2 cup of zucchini chopped
1 tsp cumin
1 garlic clove
Juice of 1 lime
Dash of Olive Oil
1 tsp chili pepper
1/4 cup of 2% Mexican Cheese Blend
1 La Tortilla Factory Smart and Delicious Tortilla
1/4 cup of mashed avocado

Marinate the black beans and zucchini in the lime, cumin, chili pepper, garlic, and olive oil for about 30 minutes or overnight. Heat tortilla, bean mixture, and cheese in a skillet over medium heat. Fold tortilla over and cook a minute more or until cheese melts. Remove and top with fresh mashed avocado.

Yum! This was an awesome dinner and would make a great lunch as well. I really enjoyed this quesadilla and since the beans had been marinating over night in the lime juice and spices they had a nice kick to them.

DESSERT- Two Pieces of See's Candies. One was filled with Marshmallow and Caramel and the other was some sort of chocolate cream filling. They were both awesome!



So now on to today! I did not get in enough exercise yesterday, the scale was not kind this morning. Oh well, I have all day to get back on track. I started the day with a glass of warm lemon water and a cup of Joe. I then decided I needed to go back to the basics - Oats.

Vanilla Date Oats

1/2 cup of rolled oats
1/2 Almond Breeze Unsweetened Vanilla Milk
1/2 cup of water
1 tablespoon of ground flaxseed
1 tsp Cinnamon

Cook for 4-5 minutes over medium heat. Remove from heat and top with:

2 chewy dates, diced
1 tablespoon slivered almonds

Enjoy!



I am teaching Interval Training this morning at Hill Country Fitness and then Kids In Motion this afternoon. I will definitely have time to squeeze in a run as well as weights and am going to eat healthy! I think all my weekend noshing of pancakes and ice cream pie is showing up on the scale so no See's Candies today.
