I am sad that the weekend is almost over it has been a very productive and fun weekend. We missed the hubby but he has safely landed and is on his way home as we speak. Emmet won his last Lacrosse Game and got a trophy to boot. Let's just say, he was very excited. The trophies are a big deal to him.... now I am not sure if he will be playing next year, he honestly does not have an agressive bone in his body, and is fun to watch to see how he handles the rough and tumble boys barreling toward him. God Bless Him. He is actually a very talented golfer and would love to see him put his focus on that... but want him to make that decision not me!
The kids and I hung out and worked on our garden, I got a work out in- a 30 minute run on the treadmill and 30 minutes of weights. I over did it on the pancakes this morning by finishing up what the kids' did not finish (hate that when I do that) so had a small snack for lunch and a Green Vibrance Smoothie before the game.
Dinner tonight was from The Flexitarian Diet Book. A reader had written me telling me how much she loves the Taco Salad and I had not tried that recipe yet. She was right... this is a good one! I made a slight tweak to mine just due to ingredients but give it a try absolutely wonderful.
Black Bean and Blue Corn Chip Salad
1/2 cup black beans rinsed 1 garlic clove minced Juice from 1 lime 1 tsp cumin 1 tbsp olive oil Salt and Pepper to taste 1 cup spinach 1 cup red and green romaine lettuce 1/4 avocado, diced 6 grape tomatoes, sliced 11 Guiltless Gourmet Blue Corn Chips
Mix black beans with garlic, juice and olive oil. Mix lettuce, avocado, black bean mixture, tomatoes and crushed blue corn chips together Toss and serve.
The creaminess from the avocado and beans and the crunch from the chips makes this salad delightful to eat. I loved it and it was extremely simple to make as well.
1/2 cup of cottage cheese with 1 cup cantaloupe. Yum!

Total Calories- 245 calories
Now this should be all for me today (especially with my pancake pig out) but there is one more Rhubarb Crisp in the fridge that needs to be eaten.... I hate to waste food... and my husband and kid's won't eat it! We shall see.
