Bite-Sized, Low-Cal Basketball Treats

The Michigan State Spartans (my alma mater) were up for their 3rd National Championship against the North Carolina Tarheels last Monday night.

To cheer them on, I hosted my own little Spartan cheering section at my apartment, and what better reason to bake up a tasty, bite-sized basketball treat? I whipped up some low-cal basketball cupcakes for my guests and, though the Spartans were defeated, I thought you all would still like to get in on the recipe action.

I chose mini cupcakes as a more party-friendly option, but full sized cupcakes work just as well. Substituting the Diet 7-Up for the eggs and oil is an easy way to cut back on calories, as well as using low-cal Cool Whip + sugar-free pudding as your frosting. Try mixing and matching different diet soda flavors and cake mixes to find the taste you like the best. And don’t forget to share your successful combination finds with me!

  • 1 box of Pillsbury confetti cake mix (or any flavor of your choice)
  • 1, 12 ounce can of Diet Cherry 7-Up
  • 1, 16 ounce tub of fat-free Cool Whip
