Beans, beans WITH magical fruit.

P8230069This is similar to a fruit and chicken salad, except we left out the chicken this time.  Instead we used:

  • White beans (Navy beans)
  • pineapple chunks
  • mandarin oranges
  • grapes
  • celery
  • rice

For the dressing it was simply

  • The juice from the can of pineapple (only about 1/4 cup of it)
  • 1/2 cup of plain yogurt

This salad went over surprisingly well.  The kids actually hated my Gnocchi soup so much, they were begging for more salad so they wouldn’t have to eat their soup.  Whatever works, right?

I added some chopped romaine lettuce to mine and had a big salad.
