Bean and Cheese Pizza with Fresh Salsa and Guacamole

Posted May 20 2009 12:35pm

Good Afternoon!

So I blew my run this morning because I forgot to send my son Emmet in his class t-shirt for the field trip. I had to run home and get it and basically blew my running time, so much for being organized. So I am going to do a 10 minute jump rope work out that is supposedly going to burn 160 calories. I hope so!

Despite my lack of workout, I was hungry once I got home and felt like comfort food. I made a Bean and Cheese Pizza topped with Fresh Salsa and Guacamole. Yum!

Bean and Cheese Pizza topped with Fresh Salsa and Guacamole

1 La Tortilla Company Smart and Delicious Whole Wheat Tortilla- 80 calories
1/4 cup of Fat Free Refried Beans- 45 calories
1/4 cup 2% Mexican Cheese Blend- 70 calories
1 1/2 tablespoon Guacamole- 50 calories
1 1/2 tablespoon Fresh Salsa- 30 calories

Total Calories - 275 calories approximately. I am going to round up to an even 300 calories for lunch.

I also was feeling like a needed a little veggie crunch so I had a 3 oz. serving of baby carrots for 35 calories.

I am sufficiently satisfied and love ooey gooey quesadillas and such.

Honestly, it is my love of dessert that kills me everytime. I am not going to give it up but I am going to work on portion control. My serving of Yogurt Planet was a bit large yesterday and even though I just added fruit and maybe a few Chocolate Covered Pomegranates... it was more than one serving size. I also have been adding in my new love- Green Vibrance Smoothies and I think those calories are getting lost in the shuffle as well. Or maybe... I should just stop obsessing about food and go and workout!

Off to jump rope and then pick up the kids! Have a wonderful afternoon and I look forward to sharing dinner with you.
