Getting ready for a week trip seems to be taking longer than I thought. I have been doing laundry all day, getting out some cooler weather clothes and gathering everything else I think we might need. I will then go back and weed out things that are not absolutely necessary to take but have at least started the process.
We still need to get haircuts, go to the dentist, get Gumbo (our dog) his shot, confirm boarding reservations but I actually got a lot done today.
I did manage to get in a small workout and of course, EAT!
I am also trying to eat down on everything that is in the house so ended up making the kids and I the best BBQ Tofu with Swiss Chard Greens and Sweet Potatoes. The kids absolutely love this dish and they wanted more tofu. My son is a Tofu head, he literally eats this stuff almost everyday and many different forms and was all disappointed when he was told there was no more!
