BBQ Chicken with Avocado Mango Salsa

Just a quick post to tell you about din-din and share a super easy recipe that was very refreshing on this HOT (83 degrees!) day – BBQ Chicken with Avocado Mango Salsa!


Once again my beloved griddler made an appearance as the appliance du jour this evening, along with the sauce du jour – Famous Dave’s Rich & Sassy BBQ Sauce ! I simply marinated two chicken breasts in the sauce for about 10 minutes, then placed them on my piping hot griddler.

Like a George Foreman grill, the griddler also whisks away extra fat and collects it in a removable tray underneath the appliance. Seriously, what can’t this baby do?! I’m certain I’ll come home one day to find it dusting the house and folding the laundry. ;)

Earlier, while the chicken was marinating, I whipped up an incredibly easy salsa.

Makes 4 servings.


  • 1 mango
  • 1/2 avocado
  • 1/2 jalapeno pepper
  • 1/4 small red onion
  • 1 handful cilantro
  • 1/2 lime
  • salt


Chop all ingredients and add to a small bowl. Add lime juice and salt, then taste. Adjust seasonings if necessary.

Plate your chicken, top with some chunky salsa, add some fresh veggies and feast! :D


You need to run, nay – sprint, and make this salsa! It is so cool and refreshing. I was eating it by the chicken, spoon and chip full, and can confirm that it is simply divine all three ways. ;)


The flavors went so well with the tangy BBQ sauce and the combination of textures – crunchy, creamy, chewy – were fantastic!


A quick two minute zap from the microwave gave my broccoli a nice tender-crisp bite. Love me some broccoli, don’t ya’ know.

Well, true to my word – I will be tuning into America’s Next Top Model at 7:00 (What? 26 year olds shouldn’t still be watching ANTM? I didn’t get the memo…) and hitting the hay at 8:00. It’ll still be light out and the neighborhood children will still be playing in their yards, but I’ll be sleeping like a little angel. O:)
