Hello friends! Hope your week is shaping up nicely. Things are moving along here. Haven't posted a lot of food this month because we're still in the middle of our Smoothie Feast, but we have had a couple of fun goodies here and there. =)
One thing I've discovered is that staying on track with the Smoothie Feast is much easier if ya shake it up a bit with a little spontaneous cheating. In that spirit, Wubba whipped up this terrific dip for everyone. We spread it on some gluten-free rice crackers. Totally YUM!
No, the rice crackers weren't part of the "plan" (did you read the "cheating" part?) but, they sure did help kill some crunchy/salty cravings. Remember that I'm not a big stickler for rules. In my book, dietary "rules" are more like guidelines really (all hail Jack Sparrow and the pirate's code). Heck, they cry out to be bent a little bit. Bwahahahaha!
So, instead of a box of tater tots, I can satisfy my cravings with a few crackers topped with this rich, healthy dip and still respect myself in the morning. Frankly, if I want to like myself at all, I have to be careful not to be too legalistic about the rules of life in general. Otherwise I'm constantly loathing my perceived failures.
Basil Avocado Spread/Dip
- 1 ripe avocado - 20 basil leaves - 1/4 cup cilantro - 1/4 cup rice milk (optional - just makes the dip a little lighter and less like guacamole) - 3 cloves garlic, peeled - pinch of sea salt - pinch of hot pepper flakes
Combine all ingredients in food processor or high speed blender and process until smooth and creamy. Use as a dip for veggies, chips, and crackers. Or, spread of crackers and top with raw veggies.
How do you feel about food "rules"? Are you a stickler for them or do you think they are negotiable? Are you hard on yourself? Do you have a lot of "rules" by which to live? Or do you excel at extending grace to yourself and others?
