Pittock Mansion The kids are back to school and I am excited to have the holidays behind us and ready to get back into the groove. I started off my Monday back at the gym and the Body Pump class and then Tuesday I shook things up a bit by going to Barre 3, a unique workout where ballet barre meets pilates and yoga. Develop the length of a dancer and the strength of an athlete with our highly effective 60-minute workouts. Each class follows a thoughtful sequence for fast body shaping results and long term postural benefits. I truly enjoyed this class and am very sore today, in a good way! I think it is important to shake up your routines a little and shock your body by using your muscles in different ways. The class was definitely rigorous and I can't wait to go again. I am super excited to see what they have to say about my diet and give me some suggestions to help with my terrible sweet tooth. Speaking of sweet tooth, I have been on a quite a cake making binge lately. In the past week I have made an Applesauce Pecan Bundt Cake, a Coconut Cake and last but not least a Dark Chocolate Layer Cake with Chocolate Buttercream Frosting! Dark Chocolate Layer Cake with Chocolate Buttercream Frosting I got the recipe for the Chocolate Cake from Devin Alexander's The Most Decandent Diet Ever book and it was a real winner! This cake is supermoist and you would never know that it was lower in calorie than most slices of chocolate cake. 1 slice of cake is 294 calories versus a traditional serving of 555 calories. The buttercream frosting is to die for and made out of light butter and light cream cheese. Oh my. My husband has been asking me to a make a Chocolate Cake for weeks now and am so glad that I discovered this recipe. I will definitely make this again. Besides cake, I have been thoroughly enjoying my new love Abby's Big Bowl • oats (raw, old-fashioned) - 2 tbsps • Kashi 7 Whole-Grain Nuggits - 2 tbsp • Wheetabix Bisquits - 1/2 of a bisquit, shredded • Uncle Sam's - 2 tbsps • flaxseed meal (ground) - 1 tbsp • dried cherries - 1 tbsp • sliced raw almonds - 1 tbsp • grapefruit - 1/2 with juice • Almond Breeze- Unsweetened Vanilla - 6 ounces • banana - sliced • kiwi - 1 sliced Directions Toss all ingredients except the grapefruit and milk substitute into a bowl. After cutting the grapefruit in half, use a small, sharp knife to remove the segment Add the segments to the top of the bowl and squeeze in the juice. Top the bowl with milk substitute. Enjoy! I am looking forward to another good year and am excited about the opportunities that are presenting themselves so far. We are having a great time with Steve's mom and her husband Nick and have had fun checking out the Portland Museum of Art, the Pittock Mansion and the Oregon Historical Society.
