Banana Oatmeal Pancake with Peanut Butter and Berries

Good Morning and Happy Hump Day!

Can you believe it is already Wednesday? The week is just whizzing by and I am looking forward to this weekend already.

I woke up a little hungry this morning and was pleasantly surprised by the number on the scale and could not figure out what I wanted for breakfast. I went with the fruit that needed to be eaten and that was bananas. Of course, I contemplated having my favorite PB & Banana on Ezekiel English Muffin, but thought I should mix things up a bit! I combined all my favorites into one this morning: Oatmeal, Bananas and Peanut Butter. I made a quick Banana Oatmeal Pancake with Peanut Butter and Berries. This really hit the spot!

Banana Oatmeal Pancake with Peanut Butter and Berries

1/3 cup of rolled oats
2 egg whites
1/2 banana, mashed
1 tsp baking powder

Combine the above ingredients. Heat a skillet over medium heat and sprayed with cooking spray, pour batter and cook for 3 minutes and then flip and cook another 1 to 2 minutes. Remove from heat.

Top with:

1 tablespoon Naturally More Peanut Butter
1/2 banana, sliced
Drizzle of Honey

Absolutely delicious!

On the books today, teach Baby Boot Camp, go to traffic court and pay my ticket (remaining $240), pick Emmet up from Cooking Class at Central Market and then squeeze in some sort of workout. I am also working on my sequence for yoga class on Saturday morning.
