I’m usually not a big fan of fad diets, but recently I’ve been reading a lot about the Paleo diet and taking bits and pieces of it and incorporating it into my diet. Not sure how I feel about the diet all together, but there is some very interesting information about nutrition, and definitely some great recipes. A friend of mine had mentioned almond flour chocolate chip cookies, so I decided to give them a try. Then I took it one step further and made banana chocolate chip cookies. Incredibly simple to make, and delicious…and they are Paleo AND Vegan.
Paleo Banana Chocolate Chip Cookies
2 1/2 cups Almond Flour
1/8 cup coconut oil, softened
2 ripe bananas
3 Tablespoons pure maple syrup
1/4 teaspoon sea salt
1/2 teaspoon baking soda
2 teaspoons vanilla extract
1/2 cup dark chocolate chips (I use one small chocolate bar that is cut up in small pieces)
Mix all the dry ingredients together. Add in the two mashed bananas, coconut oil, maple syrup, and vanilla extract. Fold in chocolate chips. Drop batter by tablespoons onto a greased backing dish or silpat. Bake at 350 degrees for 15 minutes then allow to cool and serve.
