Banana-berry Raw Ice Cream

Last night we had a fabulous dinner thanks to Noelle, who blogs at An Opera Singer in the Kitchen. Livy made Noelle's Rawlicious Kale Salad with Garbanzo Mash and some zucchini chips. Yum!! Liv left out the sesame seeds (because they are high in oxalates) and added some red pepper flakes. I never knew raw kale could taste SO good. =)

Of course, a scrumptious savory dinner calls for an equally exquisite dessert. Wubba wowed us with his Banana-berry Raw Ice Cream. This stuff is to-die-for yummy. It sent me down memory lane to the days when I worked in an ice cream parlor. We served special flavors of ice cream on occasion...my favorite was boysenberry. Wubba's raw ice cream came amazingly close to the flavor of that old fashioned treat.

Banana-berry Raw Ice Cream (Makes 1 quart of ice cream)

Toss the following ingredients into your high-speed mixer and process until you have a creamy-smooth ice cream consistency. Chill in the freezer if the mixture is too warm.

- 5 Brazil nuts
- 1/2 cup walnuts
- 1 Tablespoon coconut oil
- 2 frozen bananas
- 1/4 cup Acai juice
- 2 Tablespoons frozen Goji Berries
- 1/2 cup frozen peaches
- 1/2 cup frozen cherries
- 1/2 cup frozen blueberries
- just a pinch of sea salt

I just have to share one more fun thing with you today. Misha often prepares the photos for our blog very late at night and leaves them on the jump drive for me when she heads out for college classes in the morning. When I opened today's photos I found this one

What a great sense of humor that girl has!! I was laughing all morning.

Hmm, think I'll head into the kitchen and see if there are any more ice cream monsters hanging around that I need to vanquish. ;-)
