In moderation? What is the difference if you have a small amount of sugar vs. the substitutes you mention? In any kind of detox diet they caution you not to have any sugar OR substitute because the fake stuff is just as bad as far as sweet cravings go as the real thing. I don't have too much knowlege on this - just curious if anyone knows more!

You can also substitute using apple sauce and yogurt or leave out the egg yolks. As for sugar, I don't like using fake sugar. When cooking, I stick with baking sugar (a finner grain of regular sugar) and Sugar in the Raw with coffee.
I've never heard of xylitol, stevia, or agave nectar. Where can you find them? I can't imagine they'd be on the shelves of a major chain grocery store.

With a little creativity, you don't have to eat bad food to enjoy sensuos, divine, gorgeous food.
Bake with xylitol, stevia, or agave nectar instead of sugar.
Use Cacoa nibs instead of chocolate.
